A Spud with a Bindi

Papa Guapa, Mexico City’s multifaceted baked potato eatery, has turned a sharp left corner and headed out for a passage to India with its new Eastern-focused, vegan-friendly menu.
The star of the new meat-and-dairy-free bill of fare is the Paparya Rai, a baked tater drenched in curried lentils, tapioca, peanuts, tofu and chillies.
Named in honor of Bollywood film star Aishwarya Rai, the new dish is a combination of traditional Indian flavors.
And to accompany the new taste-of-India menu, Papa Guapa is offering a selection of Asian-flavored beverages, including a chai and cinnamon tea with cardumen, saffron and almonds.
The new menu items are now available in all for Papa Guapa locations.
